Baking hemp cookies with chocolate – the healthier option



Hemp cookies with chocolate

Ingredients:

 

  • 240g wholemeal spelt flour

  • 30g hemp flour

  • 200g butter or margarine

  • 75g sugar or alternatively 60g birch sugar, coconut blossom date sugar

  • 1 egg

  • 1 vanilla pod

  • 1/2 teaspoon baking powder

  • 150g shelled hemp seeds

  • 125g nougat

  • Chocolate as desired


Preparation of the hemp cookies:

Quickly knead a shortcrust pastry from butter, sugar, vanilla egg, spelt flour, hemp flour, baking powder and hemp seeds and leave to rest in the fridge for about 1 hour. Then roll out the shortcrust pastry to a thickness of about 3mm and cut out circles or hemp leaves. Bake in a convection oven at 180° for about 7 minutes. Spread the cooled biscuits with nougat and put them together, then dip halfway into liquid chocolate and leave to harden.


VARIANT:

Instead of nougat, spread hemp biscuits with jam and then assemble.
